Hyaluronic AcidUnlike a lot of other ingredients typically found in nutritional supplements, hyaluronic acid is a substance that occurs naturally in the human body. Hyaluronic acid is classified as a glycosaminoglycan (commonly known as a GAG), and is closely related to chondroitin sulfate and dermatan sulfate. The natural form of hyaluronic acid can be found in many places throughout the body, including the connective, neural, and epithelial tissues, as well as the synovial fluid, skin, and cartilage. Hyaluronic acid found in the joints and tissues of the human body carries out several functions, including promoting joint flexibility, providing lubrication, and strengthening joints. Hyaluronic acid is also thought to play a role in helping the skin retain its moisture.Another thing that makes hyaluronic acid unique is that not much was known about it until relatively recently. A German-born biochemist by the name of Karl Meyer was the first to detail the structure of hyaluronic acid during the 1950s. Soon after, this substance began to be used by medical professionals during some types of eye surgeries, including corneal transplants and cataract surgery. At this time, however, there was not much interest in consuming hyaluronic acid in supplement form. Interest in hyaluronic acid was largely stimulated by a segment on the popular news show 20/20. Titled "The Village of Long Life: Could Hyaluronic Acid be an Anti-Aging Remedy?," it told the story of the people of Yuzuri Hara, a small Japanese village. After viewing this story, many people became interested in incorporating more hyaluronic acid into their diets. However, the fact that there are so few foods that contain this substance made this a difficult endeavor. It is speculated that the people of Yuzuri Hara get their high doses of hyaluronic acid from starchy root vegetables like sweet potato, sticky white potatoes, and konyaku, a root vegetable with a gelatinous texture. None of these would be typical staples of North American diets, so consuming them on a regular basis would involve completely changing eating patterns, something that would obviously be quite inconvenient. Furthermore, it is not known for certain whether these starchy root vegetables are the true source of the hyaluronic acid. Consuming animal parts like joints and cartilage, which would contain high concentrations of hyaluronic acid, is another option, but it would not be a very appetizing one for most people. Making a broth out of these parts would be a good alternative, but it would probably be difficult to consume it in adequate quantities.
